Standard convection just can’t keep up. That’s why we use short-wave halogen infrared bulbs. Instead of just blowing hot air around, these lamps send energy straight into the protein. It vibrates the water molecules deep inside the meat, so the core and the surface heat up at the same time. No more guessing games.
How the Tech Actually Works
Here is the secret: these lamps use a quartz envelope filled with halogen gas. This stops the filament from gunking up the glass, which means your light stays bright and consistent. It doesn’t just dim and die over time. We pair that with a PID controller to keep things under control. It lets you tweak the power on the fly. This is huge because it stops the surface from searing too fast, giving the heat a chance to actually travel to the center.
Swapping Bulbs Without the Headache
When a bulb goes during a dinner rush, you don’t have time to mess around. Most of our replacements use R7s or similar snap-in connectors. You just pop the old one out and drop the new one in. Simple. The quartz glass is designed to let the IR energy through without soaking it up, which keeps the efficiency high. **One big warning though:**you have to match your voltage and wattage exactly. Don’t try to “upgrade” to a higher wattage. If you do, you’re likely to fry your control board or actually melt the housing. Not a good look.
A Few Things to Watch Out For
Infrared heat is intense. It puts a lot of pressure on the top of your oven. While the “instant-on” heat is great for speed, that radiation can be brutal on things like gaskets or wiring if they aren’t built for it. Keep your vents clear. If heat traps around the socket, your bulbs are going to burn out way faster than they should. Give them some room to breathe.
