When you’re shopping for a replacement lamp for a commercial oven, it’s easy to just think of it as a light bulb. But it’s not. You’re actually managing how heat hits your dough.
The secret to the browning
You want that Maillard reaction—that’s the science-y word for the flavor and color we love—but you don’t want to turn your bread into a crouton. Here’s the trick: short-wave IR digs deep into the loaf, but medium-wave IR stays on the surface. That’s why we stick with quartz halogen tubes. They hit the surface fast and hard. If your intensity is too low, your bread stays white. Too high? You’ll char the tips before the inside is even cooked. It’s a delicate balance.
Watch your power
We can tweak the wattage and voltage to fit your specific oven, but you’ve got to be careful here. Higher wattage means more heat per square inch. Sounds great, right? Just make sure your power supply can actually handle it. If you shove a high-wattage tube into a circuit that isn’t rated for it, you’re going to trip breakers or, worse, fry your wiring. Not a great way to start a shift.
